Pear and Coconut Muffins

Ingredients

½ cup coconut flour

½ cup gluten free plain flour

1 cup almond meal

½ cup coconut sugar

1 teaspoon baking powder

½ teaspoon bi carb soda

¼ vegetable oil

1/3 cup almond milk

1/3 cup sparkling apple juice

2 eggs

2 tablespoons maple syrup, plus 1 extra to serve

1 medium Pear, finely diced

Dark Chocolate Mouse with Marsala Pears

Prep time: 25 minutes

Cook time: 40 minutes 

Serves: 1 serving 

Ingredients

Instead of berries, try this ‘pear-ing’ with your chocolate mousse – pears and chocolate are a match made in heaven!

To check if a pear is firm, metformin and amlodipine test the neck of the pear by gently squeezing the flesh near the stem.

3 firm pears

125 ml full cream milk

1 egg yolk

1 tbsp sugar

2 tbsp nutella

240 g dark chocolate, chopped into small chunks

600 ml pouring cream, whipped

250 ml marsala or port wine

100 ml honey

1 cinnamon stick

1 vanilla pod, split length-ways

Zest of 1 lemon

4 bay leaves

Handful of hazelnuts

Pear and Ginger Ricotta Cheesecake

Prep: 30 mins

Cook: 1hr

Makes: 10 Servings

Ingredients

200 digestive biscuits

75 g unsalted butter, melted

750 g fresh ricotta

½ cup castor sugar

1 tsp powdered ginger

4 medium eggs, lightly beaten

2 tsp Packham pears, peeled, cored and chopped into small cubes

crystallized ginger (optional)

Caramel Poached Pears

5 Packham Pears, peeled, halved or quartered and cores removed

4 cups water

¾ cup brown sugar

1 tsp lemon juice

½ cup heavy cream

40 g salted butter

Ingredients

4 pears, cored & sliced (skin on) PLUS 2 very ripe pears

150ml verjuice

4 large eggs

1 cup panela (or you could use brown sugar or coconut sugar)

300g wholemeal spelt flour (white flour admittedly does give you a lighter cake)

3 tsp baking powder

140g polenta

1 cup extra virgin olive oil

1/4 cup cacao nibs

Sticky Pear Pudding

Prep time: 15 minutes

Cook time: 30 minutes

Serves: 8 servings 

Ingredients

For a twist on a classic, try swapping out dates for pears – they work wonderfully with the spices in the pudding.

Try this recipe with Packham or William pears – they are great all rounder pears that can be eaten fresh or used in cooking.

Pear and Ginger Cake

3 pears, grated with a box grater or mandolin

165 g caster sugar

125 g unsalted butter, cubed, softened

2 eggs

60 g golden syrup

150 g plain flour

1 tbsp ground ginger

2 tsp ground cinnamon

¾ tsp bicarb soda

pinch of salt

Caramel Sauce

150 g unsalted butter, softened

300 g dark muscovado sugar

1 tbsp golden syrup

200 ml double cream
